Avo-Caprese Salad with White Balsamic
At my house avocado is a food group of it's own...
The FDA hasn't said it, but I think we all agree it's a staple. That's why I added it to this tossed caprese, to remind you to get your daily recommended allowance (RDA). I made a bite-sized caprese salad the other day and it was sooo good I HAD to think up another one.
This one features avocado, mozzarella pearls, tomato and basil tossed in white balsamic vinegar and oil. So simple, so summery!! Make it when you cook out, make it for a party, make it for your lunch. I don't care— just make it!
White Balsamic Avo-Caprese Salad
- 1 pint grape or cherry tomatoes, halved
- 1 C. mozzarella pearls
- 1 avocado, cubed
- 1/4 C. fresh basil, chiffonade
- 1 clove garlic, finely minced
- 2 T. olive oil
- 3 T. White Balsamic Vinegar
- Lots of Salt & Pepper
Lightly toss ingredients together in a large bowl.
